Sichuan Cuisine

Sichuan cuisine, also known as Szechuan cuisine or Szechwan food in the West countries, is a style of Chinese cuisine originating in Sichuan Province. Sichuan cuisine gains great fame for its bold flavors, particularly the pungency and spiciness, due to liberal use of garlic and chili peppers, as well as the unique Sichuan pepper. Peanuts, sesame paste and ginger are also important ingredients in Sichuan cuisine. Chengdu style is a best known regional sub-style of Sichuan cuisine, while other styles include Chongqing style, Zigong style, and Buddhist vegetarian style.

Sichuan cuisine has an appealing smell of being crisp, tender, salty, sour, hot, and sweet. The Sichuan pepper is an important flavoring in Sichuan cuisine, and was introduced into China from South America around 200 to 300 years ago. It produces a "tingly-numbing" sensation in the mouth. Prominent sauces of Sichuan cuisine consist of yuxiang, mala, guaiwei, tangcu, jiangzhi, and ganshao. Several of them are widely used in Chinese cuisine as a whole today. Sichuan cuisine lays emphasis on cooking techniques. More than 20 distinct techniques include stir frying, steaming and braising etc.
Some well-known Sichuan cuisines include Kung Pao chicken, Twice Cooked Pork, Fish Head in Bean Curd Soup, and Ma Po Tofu that is bean curd served with very hot chili mince meat.  Although many dishes live up to their spicy reputation, they are also many recipes with little or no hot spices at all, such as Tea Smoked Duck.
